Our roasting philosophy is subtractive rather than additive. We remove what hides the truth of the bean. Light profiles that honor terroir. Careful extraction that reveals complexity without force.

The Space
Our space was designed in collaboration with Aoi Studio, a Portland-based firm that shares our belief that environment shapes experience. Natural materials, diffused light, and unhurried proportions create a room that invites you to stay.
White oak tables sit alongside clay-plastered walls. Linen curtains filter the morning sun. The music is low and deliberate, an ambient score that supports conversation or comfortable silence.
There are no screens on the walls. No harsh overhead lights. Just space to breathe, think, and savor what is in front of you.
